Chicken & Broccoli

A healthier version of Chinese Chicken & Broccoli.

Ingredients:

  • 1 lb organic breast tender, cut into cube pieces
  • 1 pack of organic baby broccoli ( from trader joes)
  • 1 tsp coconut oil
  • 1 TBS water
  • For the marinade:
  • 1/2 tsp baking soda
  • 1 tsp organic sugar ( coconut sugar or Raw honey)
  • 1 TBS raw coconut aminos (you can also use bragg’s liquid aminos )
  • 2 TBS Coconut oil
  • 1 TBS water

For the sauce:

  • 1/4 cup + 1 TBS raw coconut aminos (low-sodium soy sauce)
  • 2 TBS Coconut sugar
  • 1/2 tsp garlic powder
  • 2 TBS organic flour
  • 1 TBS rice vinegar
  • 1 TBS water

Method:

Mix the marinade ingredients in a small bowl – pour over chicken and let marinate while preparing the sauce and broccoli. In a small bowl, whisk together the sauce ingredients.

In a large skillet over medium-high heat, heat 1 tsp coconut oil. Add chicken with its marinade and a 1/4 cup of the sauce mixture. Sauté until chicken is golden brown, stirring frequently. ( about 5 min) then add broccoli cook another 3 min. Add remaining sauce and 1/4 cup of water. Cook for 2 minutes to thicken sauce. For a thinner sauce, add more water a bit at a time. Enjoy!!!

*Remember to use Organic ingredients it taste better!

30 Day Squat Challenge

I decided to try out and add the 30 day squat challenge to my workout. I have been eating clean for a while now but working out on and off until 2 weeks ago. I am getting back on track and will stick to it this time.

When I first started eating Organic I was also working out, I seen results and felt so energetic and good about my self until I slowed down, working out on and off made me feel more tired and out of it.

If you’re eating clean and not exercising start exercising, you can start slowly and make it part of your life. I assure you, you will see and feel a difference.

This squat challenge is a good experience and I do feel it in my legs. It suppose to work out all the muscles of your lower body including your butt. I am at day 7 of the challenge. If you want to join me in this challenge you can just follow the chart and continue doing the amount of squats that is required for each day and when the challenge is over you can post your progress, or share your progress in words as well as your experience.
