A healthier version of Chinese Chicken & Broccoli.
Ingredients:
- 1 lb organic breast tender, cut into cube pieces
- 1 pack of organic baby broccoli ( from trader joes)
- 1 tsp coconut oil
- 1 TBS water
- For the marinade:
- 1/2 tsp baking soda
- 1 tsp organic sugar ( coconut sugar or Raw honey)
- 1 TBS raw coconut aminos (you can also use bragg’s liquid aminos )
- 2 TBS Coconut oil
- 1 TBS water
For the sauce:
- 1/4 cup + 1 TBS raw coconut aminos (low-sodium soy sauce)
- 2 TBS Coconut sugar
- 1/2 tsp garlic powder
- 2 TBS organic flour
- 1 TBS rice vinegar
- 1 TBS water
Method:
Mix the marinade ingredients in a small bowl – pour over chicken and let marinate while preparing the sauce and broccoli. In a small bowl, whisk together the sauce ingredients.
In a large skillet over medium-high heat, heat 1 tsp coconut oil. Add chicken with its marinade and a 1/4 cup of the sauce mixture. Sauté until chicken is golden brown, stirring frequently. ( about 5 min) then add broccoli cook another 3 min. Add remaining sauce and 1/4 cup of water. Cook for 2 minutes to thicken sauce. For a thinner sauce, add more water a bit at a time. Enjoy!!!
