This recipe is from The 21 day sugar detox Cookbook, Today makes 12 days on the sugar detox and I have been Craving sugar but I still can go 10 more days without it. Here I post the cottage pie I enjoyed yesterday.
- 1 Med. butternut squash
- 2 Tbs ghee or coconut oil
- sea salt and pepper to taste
- 8 slices of bacon cut up in 1/2 in pieces plus for for garnish
- 2 med. carrots diced
- 1 cup diced green beans ( I didn’t add this)
- 1/2 med yellow onion diced
- 2 pounds of beef ( I used 1 LB)
- 4 Tbs smoky spice blend recipe for this will be posted at the bottom. (or you can use your own blends)
Preheat oven at 375F
Peel the butter squash and cut in half lengthwise. Remove the seeds and chop into 1 inch pieces. steam the squash over high heat until fork tender about 15- 20 min. While still warm transfer the squash to a food processor and blend with ghee, seasoning with salt and pepper. Cook the bacon in a large skillet when done set aside, Leaving the bacon fat in the pan add the carrots and green beans to the pot and cook for 5 min. over med heat. Add the onions and continue to cook until the carrots begin to soften about 5 min. Add the ground beef to the pan and sprinkle with the spice blend, use a spatula to break up the clumps of meat and mix. Cook until the meat is browned and carrots are cooked through. Transfer the meat mixture to an oven safe dish, either a deep pie plate or a 9 by 13 rectangle dish. Arrange the bacon pieces on top of the meat reserving a small handful to garnish, then top with a layer of the butter squash puree. Bake for 20 min. or until top just starts to brown. Garnish with extra bacon.
Smoky spice blend:
- 1 TBS chipotle powder
- 1 Tbs smoked paprika
- 1 Tbs onion powder
- 1/2 Tbs ground cinnamon
- 1 Tbs sea salt
- 1/2 Tbs black pepper
Combine all the ingredients together in a small container.
